Broccoli and Black Bean Stuffed Sweet Potato

Black Bean and Broccoli stuffed Sweet Potato.

Roast broccoli in oven an 450 degrees for 35 minutes (toss with olive oils, salt, pepper and chili powder)

Sauté a can of black beans (drained) with salt, pepper and garlic powder until warm.

Fork and microwave a sweet potato for 5 minutes. Cut and remove inside of the softened sweet potato and mix with broccoli and black beans. Re-fill sweet potato skins and enjoy!
