Quinoa, Cabbage Chicken Bowl

I wasn’t going to blog this recipe. I just made it for our church’s potluck lunch, but so many people asked me for the recipe that I decided to just post it on the blog and save myself some time.

This dish is really simple and delicious – just how I like it! 🙂

Step 1 – Quinoa

Take 1 cup of Quinoa and rinse in a bowl. Put the Quinoa in a rice cooker with 2 cups of water, some salt and olive oil. Cook in rice cooker until done.

Step 2 – Cabbage

This cabbage is actually famous – I make it all the time and it is crazy delicious. Chop cabbage into thin strips, saute in a pan with a few tsp. olive (or sesame) oil. While it cooks down season with salt and fresh ginger grated or powdered ginger. At the very end of the cook time (you just want the cabbage to get tender and semi-transparent) splash with a bit of soy sauce.

Step 3 – Chicken

Slice boneless skinless chicken breasts into thin pieces. Cook in saute pan with a little bit of olive oil. As it cooks, season with salt, garlic powder and ginger (fresh or powdered).

Mix all three ingredients together and enjoy!!!

Seriously guys, it’s really good.
