Last night’s dinner was just what I love: Simple – Flavorful – Healthy!
I have a secret pet peeve when I click on a blog post from pinterest to get a recipe and the blogger has written a novel before getting to the recipe – I’m like: “I don’t care – get to the food” so if my recipe posts seem to be lacking a little personality, now you know why!
Brown 1lb of ground turkey with Curry, Cumin, Salt, Pepper, Garlic Powder and Chili Pepper – DONE.
Toast couscous in a dry frying pan (careful to keep a close eye on it so it doesn’t burn) then add 2 parts water to 1 part couscous (chicken broth is also amazing) add salt and a handful of raisins. Cover couscous and let sit off heat for 5 minutes – fluff with fork and add a bit of chili powder. – DONE.
Chop cucumbers and tomatoes – season with salt, lemon juice and olive oil – add fresh mint and feta cheese – DONE.
