Fried Rice

This is neither 5 ingredients nor gourmet, so it doesn’t fall under my normal MO but it is SO delicious and healthy I can’t help but share it.

Sautee coconut oil with thinly sliced onions, mushrooms and broccoli. Season with equal parts garlic powder, salt and ginger. Add brown rice (I always pre-make mine and have it stored in the fridge) a little more garlic powder and ginger, plus a few splashes of soy sauce. Scramble 3 eggs in a frying pan and add to the rice and veggies.
