Ginger Lime Chicken and Mushroom Pecan Quinoa

This meal was given five stars by my husband. I think it’s the bright citrus flavor from the chicken coupled with the earthy nutty flavor of the Quinoa. The Quinoa was the highlight for me! I am filing it away for Thanksgiving, it just had that comfort food quality to it – SO GOOD!

Here’s what you need for the chicken:

– Chicken Breasts
– Limes
– Ground Ginger
– Sea Salt 
– Pepper

Cut the chicken into strips. Cook in a saute pan and season with the ground ginger, salt, pepper, and lime juice.

Here’s what you need for the Quinoa:

– Quinoa
– Broccoli
– Mushrooms
– Pecans
– Basil Pesto

Cook Quinoa according to directions. In separate pan sauté broccoli and mushrooms with 2Tbs Pesto. Add cooked Quinoa and 1 more Tbs of pesto. Mix in chopped pecans and serve.
