Salmon with Sweet Potato and Summer Veggies

I don’t usually treat myself to salmon, but this past week was my birthday, so I splurged.

I made it two different ways – the one pictured is with minced garlic, salt, pepper, and fresh lemon.
Then I made some covered in red curry paste – that’s it, just red curry paste slathered on.

To be honest, the red curry paste was my favorite…but I could taste the salmon better when it was more subtly seasoned…so, it’s your choice – win/win.

The salmon was paired with some roasted sweet potatoes. Simply cut into cubes, tossed with olive oil and seasoned with sea salt and cinnamon. Stick them in the oven at 450 degrees for 1 hr.

The summer veggies can be whatever you prefer. I had some zucchini and mushrooms on hand, so I seasoned those with salt and pepper and sauteed them until tender.

So yum. So simple. So clean.
