Creamy Ricotta Pasta

This was one of those throw a little bit of this and a little bit of that and turned out so FREAKING good I just had to share.

I am currently on the maintenance plan of the 21 Day Fix program. I’m not looking to lose weight but I still want to eat clean and healthy and have enough protein and carbs and veggies to keep my energy up and keep my cravings for junk at bay. So, ya, the 21 Day Fix isn’t just for loosing weight (although it has helped me lose 30lbs, and several of my clients over 50lbs!) it’s also just a great program to show you how to eat properly so that you feel in control and totally energized.

On the maintenance plan I get 5 servings of veggies a day, 5 of protein, 4 of carbs and 3 fruits. It’s a LOT of food, so I’ve been trying to get creative with how I can incorporate as much nutrition into each meal as possible.
This meal starts with 2 green containers overflowing with spinach and baby kale and throw them into a sauté pan with a little oil until they wilt, season with salt and add in a few grape tomatoes. Now for the magical part: the creamy sauce.

Fill your red container half full with ricotta cheese (which is classified as a protein in the 21 Day Fix meal plan) and mix with 1 egg. Season with the juice from 1/2 lemon, salt and pepper. Throw this mixture into the sauté pan with the greens and tomatoes to cook the egg. Pour this over two yellow containers of whole wheat pasta and ENJOY!

This is 2 Greens, 2 Yellows and 1 Red.
