This meal is SO hearty and filling and packed with nutrients.
You can top with cheese and salsa if you want, but it has so much flavor that you really don’t have to!!
Here’s what you need:
– Black Beans
– Chicken Breast
– Garlic Powder
– Chili Powder
Here’s how to make it:
Slice chicken breasts and cook in 1 tsp oil. Season to taste with equal parts garlic powder, chili powder, cumin and salt. Once chicken is cooked add 1 can or drained black beans. Cook quinoa according to directions and add to chicken – black bean mixture. Add a little more spice mix. Enjoy!
(I ended up putting this over lettuce to make it a super hearty salad!)
