Balsamic Brown Sugar Beef with Roasted Root Vegetables

photo 4Vegetarian meals are my happy spot, but my husband loves meat and potatoes, and since he has been studying like crazy to finish up this semester I thought I would indulge him. He loved this meat so much he called it “meat candy”. 

Here’s what you need:

– Thinly Sliced Beef
– Balsamic Vinegar
– Brown Sugar
– Garlic
– Red Pepper Flakes
– Soy Sauce (not pictured)

Drench beef in balsamic vinegar 30 min before cooking. Heat a skillet med/high. Sprinkle brown sugar, minced garlic and chili flakes on beef while it cooks. (I added a few splashes of soy sauce last minute and it really rounded out the flavor) Remove beef, but leave the juice. Sprinkle juice with flour and heat until thickens. Pour sauce over beef – Enjoy!

I paired this with some roasted carrots and potatoes. 

Here’s what you need:

– Carrots
– Potatos
– Sea Salt
– Garlic Powder
– Cumin
– Chili Powder
– Oregano
– Olive Oil

Scrub and halve carrots and cube potatoes, photo 2toss with olive oil. Season with: Maldon flake sea salt Garlic powder Cumin Chili powder Oregano Bake at 450 degrees for 40min, flipping halfway.
