This is one of my favorite summer sides!
Great to bring to a cookout and it can be eaten warm or cold (I love it straight out of the fridge!).
If you are on the 21 Day Fix, just keep the couscous, feta and asparagus separate so you can measure out the proper portions and then season with fresh lemon juice.
Asparagus – Feta – Coucous Salad
Cut 1-2 bunches of asparagus into 2 inch pieces. Toss into a sauté pan on med heat and add a dollop of coconut oil. Sauté until tender, but still firm. Season with salt and juice of 1/2 lemon.
Cook couscous according to the package, once it is done, fluff with a fork. Add the asparagus to the couscous and mix.
Finally stir in as much Feta cheese as your palate requires (I like 1/2 a blue container full).
I added a chicken breast sautéed with salt and balsamic vinegar to make this side into a meal! It’s so simple, but SO good.
